This vegan paella is cooked following the traditional technique but made only with vegetables.
Garlic, parsley, green and red pepper, ripe tomato, smoked Vera paprika, green beans, flat beans, courgette, mushrooms and green asparagus all stir-fried in EVOO.
We make a stock with different vegetables and our mixture of spices to enhance the flavour of the paella.
Whilst the stock is bubbling, we fry the ingredients in the paella pan, respecting the cooking times of each to get the ideal texture for each vegetable.
Our vegan paella, besides being healthy, is a light and tasty dish.
